Martin Gilder of Martin’s Meats is one of only a handful of UK butchers to age his meat in a Himalayan salt chamber, which enhances the flavour and tenderness of the meat. As well as longhorn beef, Martin also supplies Gloucester Old Spot and Middle White pork, Cotswold reared lamb and free range poultry. I photographed these fantastic cuts for Martin’s website.
